Founded by Noma's Rene Redzepi, MAD gathers chefs, farmers and thinkers under a crimson circus tent on Copenhagen's harbour to debate the future of food - the seventh symposium, MAD7, ran in May 2025 on the theme 'Build to Last'. Attendance skews heavily to the trade and a ticket is a genuine insider badge. No date for the next Copenhagen symposium has been announced.

How to attend
There is no fixed annual schedule - editions are announced via madfeed.co and MAD's channels, with limited tickets that sell out at once and allocations aimed at hospitality professionals. No walk-up option exists. Until a new edition is announced, the published talks and MAD's education programmes are the way in.
